Vegetarian Irish Food Recipes for St. Patrick’s Day

When you think of St. Patrick’s Day and Irish food classics, what comes to mind? Corned beef and cabbage, Irish beef stew, maybe shepherd’s pie. Clearly, if you’re trying to eat less meat, this holiday could be tricky. But I’ve found some great vegetarian and vegan alternatives for your meat free Irish celebrations! Enjoy!

Here is a simple yet delicious menu (with recipes) which happens to be vegetarian but would be enjoyed by all:

Vegetarian ‘Beef’ and Guinness* Stew

*FYI: Guinness is Not Vegan Friendly. But here is a list with Vegan Safe Stouts. I’ll be using Samuel Smith’s Old Brewery Imperial Stout – sooo good.

♣ Copycat McDonald’s Shamrock Shake ♣

Combine 2 cups vanilla ice cream (or soy ice cream), 1 1/4 cups 2% low-fat milk (or soymilk), 1/4 teaspoon mint extract, 8 drops green food coloring in a blender and blend on high speed until smooth.
